Homemade Banana Bread


4 ripe bananas
1 cup sugar
2 eggs, beaten
1 tsp vanilla
½ cup vegetable oil
2 cups flour (1 cup can be whole wheat)
½ teaspoon salt


Preheat oven to 350. Grease inside of a loaf pan with shortening. In a large bowl, mash bananas. In a separate bowl, beat eggs and then add to mashed bananas.
Combine sugar and oil to banana mixture. Stir together dry ingredients and add to banana mixture. Mix well. Pour into prepared loaf pan.
Bake 50-60 minutes or until toothpick inserted in center comes out clean.
