You will need:
125 g butter
1/2 teaspoon vanilla extract
1/2 cup castor sugar
2 cups of flour
1/2 teaspoon baking powder
1 tablespoon milk
Mix your butter, sugar and essence with an electronic whisk. Once light, fluffy and pale add your egg and mix.
Sift over the flour and baking powder. Add your milk and mix till combined.
Roll out in small balls, flatten with a fork and bake on 180 for about 22 minutes.
Drizzle over some icing sugar and serve.
